Hi,

Im looking to convert my Top Flite P51 1/7 (Around 8lbs flying weight) to electric

Im looking to use this motor (I apologise for links)

The difficulty im having is trying to get ACCURATE infor on what battery setup to use. Some are saying a 6S 500mah will do the job whereas others are saying use a 8s setup ( 2 x 4S 4900mah). I have no experience with using batteries in series and would GREATLY appreciate any input and/or pics others may have.

Planning to use a CC ICE 100 (heatsink not heatshrink) unles I can get away with my Hobby King 85A 6S controller

Same size and power, just a lot better motor. As for the ESC you are asking about, it's fine if you only want to fly with a 6S battery pack, but it doesn't go to 8S, so you will need a different ESC for an 8S battery. As for making a 6S from two 3S batteries, that is very easy to do. Just make a jumper with a connector on one end that goes to the ESC. On the other end, you will need two connectors. One wire will go from the ESC pos to the first battery pos. The Neg on that battery goes to the pos of the next battery. The Neg of that battery goes to the Neg of the ESC connector. It's super simple to make. If you need a picture of one I can do that too. The Turnegy line of ESC's are great and I use them all the time. Never had a bit or trouble out of them. I have an 80A ESC from Turnegy that will take up to 26 volts, but that's only 7 cells. You will need to find one that can take an 8S battery if you are going to use that big a battery. As for the BEC on the controller, don't use it. Put a receiver battery in the plane instead. A 5 volt 4 amp BEC is not very good in a big plane with lots of big servos and high loads. If you try and draw more then 4 amps out of it, your in big trouble. A separate receiver battery is the only way to go on a big plane. To take the BEC out of the ESC, just put a short servo extender wire on the receiver and take the red wire out of it. That kills the BEC from powering the receiver so the receiver battery will do that. If you want to use the BEC at a later date, just take the servo extension out and you are back in business.
